TORONTO — Nobu Hospitality has released drawings of its soon-to-be-completed restaurant, Nobu Toronto, and offered an update of its 45-storey Nobu Hotel, Restaurant and Residences project, slated to open in spring 2025.
The two-level Nobu restaurant and bar will open its doors at 25 Mercer St. next month, ahead of the Toronto International Film Festival, headquartered a block away in Toronto’s Entertainment District.
The restaurant, designed by Toronto-based Studio Munge and featuring Japanese cuisine, represents Nobu’s launch in Canada. The facility will span 10,000 square feet across two levels, with 278 total seats.
The Nobu brand was founded in 1994 by chef Nobu Matsuhisa, actor Robert De Niro and film producer Meir Teper.
Nobu Toronto will include a ground-level bar and lounge with 57 seats, decorated with a 28-foot bronze chainmail Lasvit chandelier; a mezzanine-level restaurant bar and outdoor terrace; a second-level restaurant with 140 seats; an 11-seat sushi bar in the second level; and a 20-seat private dining room in the second level.
Decor for the second-level restaurant will include “circular timber beams featuring intricate Japanese joinery” that “gently ripple around a suspended light and porcelain art installation crafted by Canadian ceramic artist Andrea Braescu,” the release stated.
Nobu Hotel Toronto is being built above the former Pilkington Glass Factory with two residential towers, 660 units and with the hotel located atop the west tower on floors 41 to 45. The 36 hotel suites are said to be the largest in the city.
Hotel amenities include a wellness centre with fitness equipment, Peloton bikes, interactive Nobu Pilates room and city bikes available. Guests will have access to the Sakura Lounge with meals served and access to in-suite dining.
